This Sherry comes from 25 year old vines grown in s single vineyard called Macharnudo Alto and was fermented naturally in neutral barrels

100% de-stemmed with week long cold soak at 10c gradually raising temperature with pigeage for first half of ferment following by remontage for second half before pressing and ageing in 25% new oak for top reds

these sites are mostly populated by 40-year-old bush vines

forest floor and fresh herbs escape from the glass with some spicy cedar notes also evident

There is a touch of floral notes from the small amounts of Dijon and Rued clones
